Try this healthy and easy carrot salad recipe! It makes a great addition to the dinner table and the extra peanuts add a nice crunch that will have kids eating their vegetables.
Ingredients:-
2 cups of baby carrots
1 square inch skinned piece of ginger
½ cup roasted, salted peanuts/cashew nut
¼ tsp. salt (as per taste)
2 tbs. chopped onion
2 tbs. chopped coriander leaves (optional)
2 tbs. lemon juice
1 tbs. olive oil/canola oil
A few chopped leaves of lettuce.
In a food processor put together carrots, piece of ginger, nuts of your choice and salt. Grate it together lightly so that it stays coarse and doesn’t become like a paste. Take out in a suitable bowl and add chopped onions, chopped coriander leaves, oil and lemon juice. Mix well and garnish with chopped lettuce leaves.
CHEF’S TIP: Grated fresh coconut tastes very nice if added to this salad.
