Ingredients
1 cup fresh cauliflower florets
1 cup small white mushrooms
1 cup eggplant cut into small pieces
1 cup boiled sweet potato cut into small pieces
1 cup boiled peas (optional)
3 tbsp. Canola Oil
½ tsp. Turmeric Powder
½ tsp. Red chilly Powder
¼ tsp. Black Pepper Powder
½ tsp. Cinnamon Powder
½ tsp. Salt
2 tsp. Brown sugar/sugar
½cup of water.
Cooking Directions
Put the oil in a suitable large pan and keep the pan on medium heat for 2 minutes. Add cauliflower, mushrooms and eggplant and stir fry for 3 to 4 minutes. Add all the other ingredients except sweet potato and stir fry for another 3 to 4 minutes. Add ½ cup of water and stir well to mix all the spices evenly. Cover the pan with a lid and lower the heat to lowest setting. Cook for 8 minutes and add the sweet potato. Mix it well and cook covered for another 3 minutes. Serve with any Indian bread like Naan or Paratha. It tatstes nice even with Pita bread or any bread of your choice. Also goes well with boiled rice or Pulav.
