Ingredients:-
1 Chicken Breast ( Skinless and Boneless)
Cut into 1 inch cubic pieces.
1 Lb. Cut Spinach (could use frozen too)
Add ¼ cup of water in a microwavable bowl and put the spinach
in it. Cover it with a plastic wrap and cook it for 5 minutes.Then
put it in a food processor or a mixer and make it into coarse
paste. Leave it aside in a suitable bowl.
1 Onion medium size. Cut it into fine pieces.
1 tsp. Garlic paste ( preferably fresh garlic)
½ tsp. Ginger powder.
½ tsp. Turmeric powder.
½ tsp. Red chilly powder.
½ tsp. Cinnamon Powder.
¼ tsp. Black Pepper powder.
¼ tsp. Nutmeg Powder.
½ tsp. salt.
1 tbsp. Corn Starch
2 tbsp. White vinegar.
1 tspn. Tomato paste.
4 tbsp. Canola/olive oil.
Cooking directions:-
Mix all the dry ingredients together in a suitable bowl, add vinegar, tomato paste and mix well. Add chicken breast pieces and mix well. Leave it covered for 15-20 minutes.
On medium heat put a suitable cooking pan with the oil for couple of minutes and add the cut onions, Fry them for a minute and add
The garlic paste. Stir it and add the chicken and spices that are mixed together. Stir for couple of minutes till they start becoming brownish. Add the grated spinach and mix well. Add one cup of water and mix again. Cook it stirring occasionally till it starts boiling. Lower the heat to lowest and cover the pan. Cook it on lowest heat for 20 minutes. Open the lid and stir it well. Put it in the serving dish and garnish with onion rings as shown in the picture. You may garnish it with slices of tomato as well. Serve with plain rice or with your choice of bread (preferably Naan).
