Eggplant Fritters
Ingredients:-
1 large eggplant cut into thin round slices with the skin
2 cups of oil to fry in a suitable deep fryer
4 Table spoons of All Pupose flour
4 Table spoons of chick peas (gram/ garbanzo) flour.
You could get it in any Indian grocery store if not in any
Health food store or any Supper Market.
1 Tea spoon of salt
½ Tea spoon of Turmeric powder
½ Tea spoon of Red chilly powder/Paprika (optional)
½ Tea spoon of Black Pepper powder
¼ Tea spoon of Baking soda
Directions:-
Put all the above 5 dry ingredients in a suitable bowl and mix well
with a fork.
Take a large plate and sprinkle 1 Tea spoon of this dry mixture evenly
In the center of the plate, making a small circle as big as the largest
Slice of the egg plant which you have already cut and kept ready to use.
Starting from largest size of the slices, dip pressing each side of the slice
into the dry mixture and set aside in the plate on the circled dry mixture,
one on the top of other till all the slices are dipped on both the sides.

To avoid the bottom slice to stick to the plate, you have sprinkled the dry mixture in the center of the plate. Now leave these slices together as shown in the picture for 20 minutes.
Heat the oil on a medium heat in a deep frying pan and deep fry one or two
at a time, flipping over from time to time till both the sides turn golden brown. Take them out on a paper towel to avoid extra oil and then put them on the serving plate as shown in the picture. They taste good by itself or with Tomato Ketchup as a snack or as an appetizer.
